I definitely think two full days in Bukhara is best. With 2 days in Bukhara, you can see the main sites of the city, along with some that require a bit of a walk to (like the mausoleums, Chor Minor, etc). On the second day, you can head to Chor Bakr, Sitorai Mokhi-Khosa, and take a craft workshop.

Bukhara has plenty of must-sees, including Sitorai Mokhi-Khosa, Chor Minor, Po-i-Kalyan Square (home to Kalyan Mosque, Kalyan Minaret, and Mir-i-Arab Madrasah), Ark of Bukhara, Bolo Hauz Mosque, Ulugbek Madrasah, Labi Havuz Square, and Abdulaziz Khan Madrasah.

Is Bukhara walkable?

Bukhara is extremely walkable, provided you stay in the historic center. Chor Minor and Bolo Hauz Mosque (along with Ismail Samani Mausoleum) are walkable but situated slightly away from other sites. If you plan to visit Sitorai Mokhi-Khosa or Chor Bakr, these require a taxi ride outside of the center, however.
